ANZAC Biscuits
Chewy-crisp oat and coconut biscuits sweetened with golden syrup — an Australian and New Zealand classic.

Ingredients (for 2)
- Rolled oats, 90 g
- Plain flour, 150 g
- Desiccated coconut, 80 g
- Brown sugar, 100 g
- Butter, 125 g
- Golden syrup, 2 tbsp
- Baking soda, 1/2 tsp
- Boiling water, 2 tbsp
- Optional: flaky salt & chopped rosemary
Steps
- Mix oats, flour, coconut and sugar in a bowl.
- Melt the butter with the golden syrup; dissolve the baking soda in the boiling water and stir it in — it will foam.
- Pour into the dry ingredients and mix; roll into balls and flatten on a lined tray.
- Bake at 170°C for 10–12 minutes until golden; sprinkle with flaky salt and rosemary if you like.
Cook it together: One of you melts and mixes, the other rolls the balls — make half chewy and half crunchy.
